I've just been waiting for a time to bring this up
While he does look a little out of his regular proportions here, I still think one reason that one might look and this and think "that does not look like how Nick usually looks" is because you don't see him in third person very much in the first game but when you look at his nose and the way his mouth is drawn it's actually much more similar to his PW123 courtroom sprite designs than the artwork of the latter games. Basically this still looks closer to his original artwork than any of Tatsuro Iwamoto's or Fuse Takuro's renditions of it. I think Kazuya Nuri did an okay job but he also has a tendency to make some of the other characters look kind of samey, like how Maya's proportions were more neutral looking in PLvsPWAA than in her original design.

Note that Iwamoto was already the subdesigner for GS1, and designed characters like the judge, Karma and some of the murderers. (source).
