Dunno about evolution specifically, but in regards to the x-man in general could be Gambit (er...the card thing. and after seeing Dark Phoenix concept art the idea just got more appealing) I can see why he could be wolverine though due to his apparent indestructibility, but Lang could pass off as Wolverine too. Cause he's badass. D:

As for PW AU's, that's something I've always had a fascination with. There are a few that I'm planning to write about someday:

AU 1- This is one where I'm currently writing an outline for. In this universe Von Karma kills Miles instead of Gregory (to make Gregory suffer loss that will haunt him--a 'death is too good for you' kind of thing). Phoenix would still become a defense attorney to fulfill his dead friend's dream, but ends up working with Gregory at some point to find out who killed Miles (still working on the details of that). I was initially inspired by a oneshot on fanfiction.net where both Miles and Gregory died.

AU 2- Nick's parents are actually agents and he doesn't realize the true nature of their jobs until it starts to affect his own life as an adult (either one or both go missing and he gets dragged into it or they could be a client/victim of a case). And his relationship with them has been very strained til then, which is why we hear nothing of his parents during the games...and I kinda just came up with more plot ideas while explaining this cool.

Never thought of that. O_O And X-Men Evolution is awesome.
