KyoAni should do it. Obviously, they have the most respect out of all the remakes I've seen of games ever. As long as TOEI stays at least five million lightyears away from the game, I'm okay.
But as I was saying Kanon and Air were both very respectful to the original material and just super awesome on their own right, so KyoAni would absolutely be the best studio for the job. (I mean, aside from just being the best animation studio in the world, that is!

However, the game is not really a typical visual novel, in that there's actually a bit of gameplay. I think that makes it a bit harder to adapt to anime. I don't know if the structure which works so well in-game would really translate all that well into an anime... You walk around talking to people, then go to court, over and over. It's kinda stiff and samey, it'd probably get dull fast. But then again if they cut into it too much, it might not be Phoenix Wright anymore.
So I'm not really enthousiastic about the prospect, but obviously if it does happen I'll give it a fair shake. Like this:
