I believe I've solved the mystery of why Doug Swallow made "poison". Here, let me quote the game here.
Anyways, the point of that was to see that he said "a drug sample" had been stolen from them in the middle of the night. They probably kept that sample for educational purposes, to study it or whatever. So, when they made more, they just did that for educational purposes and to replace that sample.
Also, found out a bit about the bottle necklace - it held two teaspoons exactly.
Also, found out about the whole contradiction between Diego drinking the whole thing or not - it said in the case report that they found traces of the poison on his cup. Note that it said "on the cup" and not in the coffee left in the cup. So he probably did chug the whole thing.
One more thing! They said that the poison is special because it is extremely hard to detect. So we know that it's colorless and etc.
(I just replayed 3-1, that's why I know all of this now)

Sorry. I was in a very bad mood, and somehow vented myself. Anyways, about the topic. Are you serious that Viola offered them poisoned coffee so the two gems of AA would die of poison? Also... even if they (drank?) it, the poison itself didn't work for unknown reasons.
