Because it wouldn't make sense to hide anything else. That list is being protected more than Fort Knox. It's HP can be used over and over again. If it goes, the Mafioso could lose an edge.
And TP...I wouldn't place faith in what a Mafioso says at face value.
Those bullets allow them to be turncoats...
Well... Why would he bother lying about what he had?
And, don't forget, it's unlikely that the mafia forgot bullets were turncoats. They probably had whoever had the bullet originally transfer it to someone else.

This is what I am getting at, precisely.
So let's ask ourselves.
Can we take GO's confession at face value, a seemingly harmless confession? Or are the Mafia really misleading us again?
If it is what it appears to be, we have three potential suspects, and three lynch spots. I think we can work out an arrangement to flush out the Turncoat.
Unfortunately, our little Bullet's actions might be a little more obvious from here on out, and no matter what, they are in a prime spot to die soon by the other team's hand.
But if you think about it, whether or not they Turncoat, they are in a prime spot to do a lot more damage to the Mafia team than the Townie team.

I have reasons to suspect that it's not as critical they move their Evidence around, yeah. I mean, you remember our Names List discussion, right?
Besides, I believe that if the Bullet moved, the Turncoat ability would move with it. So it'd just be moving the Turncoating Special Evidence into the hands of someone who already has been trusted with more valuable information.
But I could be wrong on that, if the Turncoat stays with whoever first had the SE! Give me a bit, I'll go ask Velotix.

As a "Wild Card" the Bullet holder could have joined the town. The could then have used a Wallet and realized what they actually were, automatically switching them to Mafia allegiance. They could however, then once again affiliate with the Town. Once they had done that, however, their affiliation would be permanent.
Also, @Ghaleon: No, if the Bullet is transferred, neither its original owner nor the recipient can turncoat.
Same goes for the Police Badge.
