You're probably just not using hiding spots or your Assassin recruits to their full potential, then. Arrow Storm is one of the easiest ways to fulfill this objective. Haystacks are almost EVERYWHERE. And then there's the crossbow, of course. Heck, you can even stick to just throwing knives and poison darts. And in Revelations, there's the distraction bombs that lure guards to other areas. Though I will admit some areas are just damn hard to hide in (the underground caverns and cisterns in Revelations).
P.S. I love how I suddenly turned this into an Assassin's Creed thread.
